This recipe for Buckwheat Crepes with Ham and Egg is inspired by the French dish known as "Galettes Bretonnes." These crepes are characterized by their deep brown color, which comes from buckwheat flour. We used Slovenian buckwheat flour, which is light brown and yields crepes that are lighter in color while still rich in flavor. You can make these crepes gluten-free by using only buckwheat flour or by combining it with all-purpose flour. This recipe is ideal for breakfast or brunch. If you want to prepare the crepes in advance, you can cook them slightly less to ensure they stay fresh when reheated.

Essential ingredients

These are the essential ingredients for making delicious, savory crepes from scratch. We purchased all of the ingredients at our local Lidl store.

Crepes—To prepare homemade buckwheat crepes, we will need buckwheat flour, all-purpose flour (or only buckwheat flour), milk, egg, and butter. Cook in a greased pan with butter, then add the filling while cooking.

Eggs - are delicious in combination with buckwheat crepes, and the dish looks pretty, too.

Ham - This recipe easily uses leftover Easter ham or prosciutto cotto. Shred the meat into large pieces and arrange them around the egg yolk while cooking.

Cheese - We recommend grating the cheese beforehand so it is ready in a bowl when cooking, as the process is quick.

Storing and freezing

Always prepare the Buckwheat Crêpes with Ham and Eggs fresh from scratch. It's easy and quick. However, you can prepare the crepes ahead of time and finish the dish when desired.

Place the crepes on a plate, wrap in cling film, and refrigerate for 3 days.

Feel free to freeze the buckwheat crepes. Cook them, leave them to cool, then stack the crepes one over another, adding a layer of parchment paper between them. Wrap in cling film and place in the freezer for up to 2 months. Before using, defrost the crepes and reheat in the microwave oven or a pan.

METHOD

  • crepe mixture

    Combine milk, egg, both flours (or only buckwheat flour) and melted butter in a blender or electric mixer. Blend until smooth and set aside until needed.

  • cook the crepes

    Make each crepe separately. Place the crepe pan over medium-low heat. First, grease the pan with a bit of butter. Add some batter and divide the batter equally by swirling the pan when it melts. After 10 seconds, add the egg to the center of the crepe. Using a spatula, divide the egg white evenly over the crepe. Arrange the shredded ham around the egg yolk. Sprinkle the ham with shredded cheese and sprinkle with salt and pepper. Cover with a lid or a different pan. Reduce the cooking temperature and cook for 30 - 60 seconds or until the egg yolk is cooked. Remove the lid. Fold the crepe into a square using a spatula and transfer to a serving plate. Repeat the process with the rest of the ingredients.
